On the Battle.net forums today, Blizzard has posted that the StarCraft II beta would NOT be closing on May 31st.

According to Blizzard, the beta was extended in order to “prepare for the final phase of beta testing”.

The beta testing will be extended in all areas until Monday, June 7. The beta will go offline at this point for several weeks while the game is being updated both in the hardware and software.

Not to worry, Blizzard also announced that the beta would be returning. The game is still set to launch on July 27th and the next beta will be open a few weeks before that.
